Crepes

I use the basic crepe recipe from allrecipes.com.  I just use Ener-G egg replacer for the eggs.

Ingredients

  • 1 cup flour
  • Egg replacer mixed up for 2 eggs
  • 1/2 cup soy milk (or rice)
  • 1/2 cup water
  • 1/4 tsp salt
  • 2 TBS Nucoa, melted
Blend all ingredients in the blender until smooth.  Heat a lightly oiled frying pan on medium heat.  Pour 1/4 cup of batter into the pan and swirl the pan in a circular motion to coat the surface of the pan evenly.  Cook for 2 minutes, or until lightly brown, then flip and cook the other side.  Serve warm with nucoa and cinnamon and sugar, or jam.

  1. Jake loved these! Not awesome on their own (I definitely never sample damaged crepes out of the pan) but filled, they were great!
