- 2-3 tsp lemon juice, apple cider vinegar, or cream of tartar
- plain or unsweetened milk (rice, oat, etc)
Add enough milk to the juice or vinegar to make 1 cup. Let solution stand 10 minutes before adding to recipe. May need to add less than recipe calls for.
Egg substitutes:
- Ener-G egg replacer
- 1 tsp baking powder, 1 TBS liquid, 1 TBS vinegar
- 1 tsp yeast dissolved in 1/4 cup warm water
- 1/ 1/2 TBS water, 1 1/2 TBS oil, 1 tsp baking powder
- 1/4 cup banana or other fruit puree (whipped or beaten)
As binders
- 1/2 large mashed banana
- 1/4 cup apple sauce or pureed prunes
- 1 1/2 TBS water, 1 1/2 TBS oil, and 1 tsp baking powder
- Combine 1 packet of unflavored gelatin with 1 cup boiling water. 3 TBS of this mixture equal 1 egg
- 1/4 cup of soft tofu (SOY, not ok for Tia or Marix!)
As leavening
- Dissolve 1 tsp yeast in 1/4 cup warm water
- 1 TBS bean flour and 1 TBS oil
- 1 TBS arrowroot powder mixed with 3 TBS water
- 1 TBS starch mixed with 3 TBS water
- For whipping 1/4 tsp xanthan gum with about 1/4 cup of water. Let stand. It thickens, and can be whipped like an egg white.
Baking Powder: (very useful for when you don't have the Hain (corn-free) powder on hand.)
For 1 tsp baking powder, use 1/4 tsp baking soda and 1/2 tsp cream of tartar
Corn syrup alternative:
- 1 1/4 cup sugar and 1/3 cup water, boiled until syrupy
- Agave syrup
- brown rice syrup
