Caramel corn

Now that Tia outgrew her corn allergy, we make caramel corn as a movie snack on family movie night.  Yum!

Ingredients:

  • 4 quarts popped corn
  • 1 cup brown sugar
  • 1/2 c Nucoa margarine
  • 1/4 c Karo syrup
  • 1/2 tsp salt
  • 1/2 tsp baking soda
Put brown sugar, nucoa, karo syrup, and salt in a microwave safe bowl.  Microwave for 3-4 minutes, stirring every minute.  Stir in 1/2 tsp baking soda.  Put popcorn and syrup in a paper bag.  Shake to mix together.  Microwave for 3 minutes, shaking after each minute.  Pour caramel corn into a bowl.  Keep breaking apart until cool.  It will be non-sticky like cracker jacks.  Mmmmm!
